This Paleo Pie Crust is the perfect base for any of your favorite pie recipes. It’s Paleo, Gluten Free, Dairy Free, and it’s Low Cholesterol.

A good pie crust is a must in any baker’s repertoire, and this Paleo Pie Crust is the perfect start to transforming all of your old pie favorites into healthier versions that you can still enjoy.
Pie crust is pretty simple, but I’ve added some cinnamon to the recipe to warm up the flavor a bit. I have also used Earth Balance Vegan Buttery Sticks to make it Low Cholesterol.
A note on cholesterol. My husband and I have reached middle age where cholesterol levels are something that we are very concerned about and we spend a lot of time talking about cholesterol levels with our friends. My husband had high cholesterol levels 4 months ago, and that was a big wake-up call. We have a young kid, and we want to do everything we can to be around for her as long as possible.
He made several changes to his diet and lifestyle. He has a very demanding job, so he doesn’t have time to all the exercise that he would like to do. But he started being very diligent about walking for 30 minutes every single morning before starting work. He cut out cheese completely which was a big change for him. I also started cooking more fish and chicken and way less meat. Eggs stayed in – he has them for breakfast every morning.
And I stopped using coconut oil as my primary fat in Paleo baking. Obviously, it’s hard to measure which factor had the biggest effect, and it’s likely that all together, they combined to have a positive effect. But the reality is that after just 4 months, my husband’s cholesterol levels dropped by 25. His doctor was thrilled, and so were we.
You don’t need any equipment for this recipe except for your hands, a mixing bowl, and a glass pie dish. It’s super simple and super fast to throw together, so you can get on with making whatever delicious delight you’re going to put IN the pie crust.
One note, however – traditional gluten flour pie crusts have a lot of special procedures to make sure that you don’t get a lot of gluten development and thus a touch pie crust. That’s simply not an issue with a Paleo pie crust that has zero gluten and zero carbs. So, really, it’s pretty much the easiest pie crust ever.

Ingredients for Paleo Pie Crust:
- almond flour
- salt
- cinnamon
- Earth Balance Vegan Buttery Sticks
- egg
Notes on Ingredients:
Almond flour – Almond flour makes this pie crust low in carbs but high in protein and fiber. It also imparts a mild nutty flavor that works for most pie filling flavors.
Salt – For flavor.
Cinnamon – Cinnamon warms up the flavor of the crust and complements the almond flour flavor.
Earth Balance Vegan Buttery Sticks – Using this shortening makes the crust less oily than using coconut oil, and it also makes it Low Cholesterol.
Egg – One egg is needed to bind all the ingredients together.
How to Make Paleo Pie Crust From Scratch
First, preheat the oven to 350 F.
Next, in a large bowl, whisk together the almond flour, salt, and cinnamon.
Add the melted Earth Balance and egg. Mix together to combine. I usually start mixing with a wooden spoon, and then I switch to using my hands so that I can really press the dough together and make sure it’s holding together.
Press the dough into a 9-inch glass pie dish. The wonderful thing about a Paleo Pie Crust is that you don’t need to roll out any dough, and it doesn’t matter if you have a hole in the crust – just patch it up. Do whatever edging you like – I usually like a wavy edge that I make by pressing my thumb and forefinger together all around the edge.
Bake for 10 minutes. Remove from oven and let cool completely before adding any fillings.
